A vibrant and flavoursome salad. Spinach, oranges, sliced fennel, mint and flaked almonds are tossed in a dressing made with olive oil, orange juice, cumin and onion powder.

- 285g baby spinach leaves
- 2 oranges, peeled and sectioned
- 1/2 large fennel bulb, thinly sliced
- 1 teaspoon chopped fennel fronds
- 4 tablespoons flaked almonds, toasted
- 1 tablespoon chopped fresh mint
- 3 tablespoons olive oil
- 2 tablespoons orange juice
- 1/2 teaspoon ground cumin
- 1/2 teaspoon onion powder
- salt and pepper to taste

- Place the spinach, oranges, sliced fennel, fennel fronds, almonds and mint into a large mixing bowl; set aside. Whisk together the olive oil, orange juice, cumin, onion powder, salt and pepper in a small bowl. Pour the dressing over the salad and toss gently to dress. Serve immediately.

I followed the recipe exactly except not sure about size of arugula since I don't have a way to measure. My husband and I agreed that is was nice to have something different, but there are other salads we like better. Unusual, but not over the top great.-14 Feb 2011

I was happy to find this recipe, having fresh spinach, fennel and oranges sitting on the counter waiting to be used. I substituted pine nuts for the almonds, other than that I followed the recipe. I love it as written. The cumin in the salad dressing is a nice touch.-24 Mar 2014
